Are you ready for Thanksgiving 2016? (We’re getting there.) Each year, we create a menu of delicious, healthy-ish recipes to prove that Thanksgiving can leave you feeling vibrant instead of stuffed with rich, beige foods. Of course, the holiday is all about traditions, so feel free mix and match colorful and healthy with your standard favorites to create the holiday table that’s best for you!

This is our final post before the Thanksgiving holiday. TIP: If you’re roasting more than one side dish in the same oven, you may need to add more time than the recipe states for a single pan; just cook until tender. You can also cook them separately and rewarm before serving. We learned that the hard way a few years ago!

1. Roasted Cauliflower and Apples with Dill

Our personal favorite: cauliflower roasted with apples and red onions makes for a sweet + savory other-worldly flavor. Top it off with some fresh dill and you’re in business.

2. Roasted Brussels Sprouts with Pecorino and Pecans

Can we have another favorite? Roasted at very high heat, Brussels sprouts lose their bitterness and become crispy and lightly sweet. Set off with salty Pecorino cheese, these are absolutely addicting.

3. Roasted Green Beans with Hazelnuts

Instead of drowning green beans in cream of mushroom soup (as comforting as that is), how about fresh green beans blackened in the oven and spritzed with lemon? Lighter, brighter, and maybe even tastier.

4. Massaged Kale Salad with Apple and Pomegranate

Massaging kale might sound strange and a little wonderful (and maybe a bit like Portlandia); and yes, it’s a little of both. Combined with apple, tangy pomegranate seeds, and an apple cider vinaigrette dressing, it’s a fresh addition to the Thanksgiving table.

5. Garlic and Chive Mashed Sweet Potatoes

Sweet potatoes are so much more than marshmallow fluff! Try them mashed with garlic, chives, and a touch of butter and milk, and you’ll never go back.

6. Apple, Walnut, and Savoy Cabbage Salad

Savoy cabbage is a light and fluffy variety that’s perfect set against tangy apple, crunchy walnuts, and salty Parmesan cheese.

7. Lemon Rosemary Roasted Potatoes

Instead of the typical mashed potatoes, how about roasted? These fingerling potatoes are roasted with fresh rosemary and lemon slices, which brings an incredible fresh flavor.

8. Whole Grain Classic Stuffing

You thought we’d skip the stuffing, didn’t you? It’s one of our Thanksgiving table faves. Here we’ve health-ified it using multigrain artisan bread, leeks, fresh herbs, and a modest amount of olive oil. It’s big on flavor without tubs of butter.

9. Pear and Pomegranate Salad

Ruby red pomegranate seeds are a holiday favorite we can’t resist! Combined with pear and a zesty white wine vinagrette, they’re a light and colorful foil to a holiday table.

10. Roasted Root Vegetables

Can’t stop, won’t stop! Roasting is our favorite way to prepare veg: this mix includes sweet potatoes, carrots, and parsnips.
